Christmas fruit cake

There's always a cake on Christmas day, and everyone love cakes. I found this Christmas fruit cake from Jamie Oliver site and decide to give it a try. http://www.jamieoliver.com/magazine/recipes-view.php?title=traditional-christmas-cake After reading the website, I realise I'm too late to bake this cake on Christmas eve. This cake need to be bake and let it age for at least 2 weeks before serving. However, according to some website, Christmas fruit cake can be store for up to a year in a cold, dry place. "Feeding" alcohol in between. Anyway, i decided to continue to bake this cake as it look so nice. This cake will be serve for Chinese New Year instead, keke.. :p I have copy and paste the Ingredient, the baking method directly from the site. Too lazy to type out everything. As I can;t find treacle from the nearby supermarket and decide to skip this ingredient. After the cake have cool down, I used a toothpick and poke holes onto the cake before pouri

Adobo

It's Christmas season again and decided to cook this Philippines dish for potluck. I found this ingredient from this website and it turn out pretty well. http://thedomesticman.com/2012/08/21/pork-adobo/ Ingredients 1.3kg pork belly, well-marbled pork shoulder, or a combination of the two 1/3 cup wheat-free tamari 10 cloves garlic, coarsely chopped 2 tbsp black peppercorns 5 bay leaves 2/3 cup vinegar (cane vinegar preferred) 1 cup water 2 tsp coconut oil Some sugar, this is not in the original recipe. I have use all pork shoulder as it's not so fattening compare to the pork belly and have also skip the coconut oil. Adding coconut milk does give a more richer and creamy taste. I have also added some sugar to make it taste less sour. Well, It;s all depends on how you want your adobo taste like. Adjust accordingly to your preference. Steps Marinate the pork with garlic, black peppercorns and tamari. Kept it in the fridge for around 1 -2 hours. I have m

Banana cake

This is my second time baking this cake, the first time was 1 week back where i baked for my colleagues in the office and they love it. I have reduce the sugar content to make it less sweet as the banana itself is already sweet and it taste better this time round This is another classic cake where everyone will ate it since young. Getting banana squash, adding flour, sugar, butter, eggs and bake it.

Butter Cake

Day 2 of my baking dairy start with this rich butter cake. This butter cake is really rich and buttery. This is quite a heavy cake, weighing about 800g. Guess i have mess up the parchment paper in the baking tin and end up having uneven pattern on the side of the cake. This cake might look burn on the outside but this is the color of the cake after baking. Lucky ;p

Earl Grey Tea cake

Second cake for the morning and I'm tired out. Am so use to the office life, lying back on my seat, enjoying the air con, sending email. Now i have been standing for the whole morning and I start to feel back aching, tiring legs. Am I getting old?? ha ha. Maybe it's time for more exercise. The second cake is this earl grey tea cake. My friend actually gave me some earl grey tea and decided to use it on a not so dense butter cake, that how this cake came about. Ha ha. Well, with some adjustment of the ingredient to make it feel prefect. This cake is for those who are looking for a relax afternoon, roting at one corner. Enjoy a cup of tea and have some cake. This is the cake. It's light buttery and the earl grey tea flavor make the day real soothing. Just imagine eating this with some English tea, listening to some music, chit chatting with friends and yawwwnnnn... So relaxing. Wanted to proceed with baking another cake, guess I'm too tired to start with a

Dark Chocolate Cake

Since i'm clearing my annual leave for these few days, decide to spend my time baking some new prroduct. My first cake for the day is this dark chocolate cake, using 70% dark chocolate for its ingredient. This chocolate cake is pretty rich, i;m able to feel the burning chocolate sensation in mouth. The dark chocolate powder on top of the cake add a additional kick to the cake. Look at the dense texture of the cake. Any chocolate lovers craving for this dark chocolate cake? :p

Rich Orange Cake

Weekend finally came and i start my baking with my Baby Belling!!!! Since it's one of my colleague birthday, decided to bake her a rich orange cake for her birthday. I am really amaze by the performance of the Baby Belling, heat is constant throughout the baking period and the top of the cake does not get burn easily, although the cake seem quite close to the heating element. The strong door does help to retain the heat inside the oven. And here is the cake. The orangery yellow color make me smile, look so good. I slightly touch the top of the cake, it's moist, soft and smell good. Accidentally touch the side of the cake while opening up the box and "injure" the cake.   The cake taste pretty good, texture is soft and it has a orange tangy after taste.   Guess what I need to do it to improve on the presentation of the cakes and my photography skill. :p   But conclusion, the Baby Belling is something worth investing for a baking oven.
